6 slicesCrusty bread or baguettedouble check bread is vegan if you are unsure
6-8leavesFresh Basiluse more or less depending on the size of the leaves
2-3 Hierloom Tomates, slicedcan sub regular tomatoes, qty depends on size of tomatoes
1/4cupMicro Greensoptional
1-2TblsOlive Oil
1 tspSea salt
Balsamic Drizzle
2 TblsBalsamic Vinegar
2 TblsDate syrupcan sub honey but then it wont be vegan
Instructions
Place your sliced baguette on a large serving plate
Layer on your sliced mozzarella, then your tomatoes, then your basil
Drizzle with your olive oil and sprinkle your sea salt over the top, generously
Whisk your balsamic and your date syrup together in a small bowl
Drizzle your balsamic mixture over the top of the crostini's, and garnish with your micro greens (optional)

Notes
I have found that this brand of Vegan Mozzarella is the best! It tastes like the real deal and is made using cashews. You can find it at most Whole Foods and other major grocery stores! For this recipe you can easily increase or decrease the servings to accommodate more people. This recipe makes 6 crostini's, so about 2 per person.
